Sud Italia is one of a handful of select U.S. restaurants participating in the official 2017 White Truffle Festival, November 3-12.

“We were really honored to be asked to be part of such an exclusive event,” says Sud Italia owner Shanon Scott. “But we wanted to do something a little different. So we created a unique dish especially for the occasion: Classic homemade apple pie topped with white truffle-infused honey and served with a glass of sparkling Moscato d’Asti by Prunotto, one of our favorite wineries in Piedmont.”

White truffles from Alba are one of the world’s most coveted delicacies. They cannot be grown or cultivated. They can only be foraged. And their availability depends solely on the climatic conditions of the vintage.

In another era, truffle hunters used pigs to find them. Today, especially trained dogs are used.

Sadly, so many American diners have only ever tasted “synthesized” truffles. In fact, most of the “truffle oils” that are sold in the U.S. are made using a chemical recreation of the truffle’s unique aromas and flavors.

But thanks to Shanon’s relationship with one of the best importers of white truffles in the country, he was able to obtain honey that has been infused with real truffles.

This special dish will be available only as long as the supply lasts.
